Connie's Kitchen: It's just outside of Knoxville. A little out of the way breakfast/lunch diner where they serve a mean breakfast. They have some of the largest, if not THE largest pancakes in America. Each one is 20 inches in diameter, a full inch thick, and weighs in at 3.5 pounds on pure pancake. Couple that with the fact that you have to eat three of them and it's quite a bit of work. Only one person has ever finished a full stack of Connie's pancakes.

You should check out Bea's in Chattanooga, TN. Each table has a lazy susan in the center and it is impossible to empty. Just as you think you're getting on top of the challenge, the waitress brings an armfull of pans to replenish the buffet. Then the despair sets in. You can not win.

I'd suggest that he try some Nashville hot chicken. Its fried chicken with intense heat mixed into the batter. Its a very different kind of heat than typical hot wings. There are multiple restaurants, I think 400 degrees is hottest, but there are lots I haven't tried. Prince's is widely considered the "gold standard" but the others may have more "challenging" fare...

LITTON'S
In Knoxville's north suburb of Fountain City, there is an AWESOME place called Litton's. They have giant portions of everything, and it's all superb! I can't open my mouth big enough to get a "normal" bite off.
There's one burger called the Thunder Road. It has pimento cheese, sauteed onions, and jalepenos. It might sound odd but trust me. You gotta get one!
For dessert, get a cupcake. They're giant too PLUS about 8 ounces of the most rich, creamy, decadent icing you'll ever put in your mouth. (Try the red velvet. You'll jump up and smack yo momma.)
For amusement, peek into the ladies' room where you can sit and watch yourself go potty. LOL Seriously, they have a mirror mounted right there across from/in front of the toilet for some reason. ;-)

You should see the World Champion challenge at Cajun Cookers in Jackson Tennessee. It's a four pound BBQ sandwich with a pound of fries and a halof pound of cole slaw. These guys really know their stuff. They won the Memphis in May contest a few years ago and they can cook ribs and BBQ like know one else. I will post a pick when i get one.

IHOP on the campus of the University of Tn, Knoxville has lauched a 20 in 20. Can you eat 20 pancakes in 20 minutes? I dare you to try it!!!
