I see that Sweetbreads are big in the culinary world. I am thinking about having a taste, I just don't know if I am brave enough for the whole experience. Is the texture like tripe? Cause I love TRIPE or more like gizzards? I am gizzard fanatic. I do apologize in advanced if I sound ignorant to the subject but I just want to know what its all about.

I have-- & it's nice. I had it in a french restaurant.. cooked in wine sauce. I didn't t hink it tasted like tripe wh I've tried,too.. try it-- you'll like it.

The sweetbreads I tasted had the texture of liver but not the taste. The taste was a mild & light meat flavour. It's really not that "adverturous" eating, except for the price.

Hey Sweetbread lovers-I have had them in numerous places, and they do differ from place to place. The best I've ever tasted was at Rene's in New Orleans. Each course at Rene's was paired with a great wine, suggested by the staff. For those that haven't tried sweetbreads, no problem, mon, just relax and enjoy the exploration of new tastes, textures and aromas! KarenW

The only adventurous thing about sweetbreads might be the price some restaurants put on them to make them look "special". Otherwise a nice and rather fine taste. Tripe is also fantastic, when done properly, I love it with plenty of paprika.
