Hey Folks, hope y'all are doing well! Here in the land of pleasant living (Baltimore, MD, USA) some Chinese mitten crabs have apparently invaded our lovely Cheasapeake Bay, possibly threatening our native blue crab species, which are the best in the world.
Rather than scream "Auntie Em! Auntie Em!" and flail our arms about senselessly, I've heard that this mitten crab is considered a delicacy in China--and I was wondering whether any of you would know any good recipes for preparing them. I'll be crabbing in a couple weeks and maybe I'll pull in some mitten crabs. Please feel free to respond here or to scottjayregner@comcast.net.
