Yeah there are some fabulous Vegetarian Restaurants not all are tofu and sprouts. Like NYC there is one we found las December that was opened by some Buddhist Monks called Zen Palate
http://www.zenpalate.com/ They have 4 locatiosn 3 in Manhattan and 1 in Princeton NJ. We have been to the one on Union square a number of times in fact was out New Years Eve dinner and enjoyed it each time. Another good restaurant that is a mix is a place called Fusia. My wife and I eat there alot and good part is they also offer vegetarian items on their menu so is good if you are a couple who is half and half one eating meat and one eating veg then you can both be happy. Easy way to find this place is walk Lex & 56 and you'll know you're at the right corner as there is one of those Chain impersonal TGI Fridays at the corner in fact the corner that TGI Fridays is on is the same corner that Fusia is on. Just start walking east on 56 and it's about 100 feet or so from intersection. Has glass windows and is a quite marrow location so don't look for a big huge entrance.
