We lived on the coast of Spain. People know how to cook there. For paella from the spanish maid. You must have a paella pan. She starts with all minced in lots of olive oil 2 onions 6 garlic cloves one red pepper minced and one green pepper minced. saute on low. add salt and pepper. Remove from pan. She assumes you have chicken ready to brown. legs thighs but breasts to go to fry 5 minutes later some fat removed but not all. Brown chicken piecss and remove.Good stuff in the pan for the seafood and rice. Your seafood should be shrimp or prawns with head on..mussels or clams..squid later if you want Saute for 2 minutes and remove. Take 2 cups of paella rice and fry for one minute.(true paella rice needs lots of water if you do not have that reduce everything by 1/2) Add 2 cups of water and 2 cups of chicken broth.
Add all back to rice (chicken too)but seafood Watch rice in pan..when water is absorbed add seafood. If adding squid add now and cook for 2 minutes. garnish with lemon
