you need a fresh pork liver about 3 pounds and about 3 pounds of pig ears you have to cut up the pig ears to bite size pieces as well as the liver then you put all of this in a large pot and put enough water in the pot to just cover the meat and cover on med. heat then just check on it every once in a while when the water is just about gone cover with water again you have to do this 3 times in total in the end you will have a tender meat with it's own sauce that you spoon generously over rice . this is my favorite recipie from when i was growing up here in florida in the country my grandmother would cook it every time we slauterd a hog we usualy eat it with a wedge of onion if your into classic country waste not want not recipies the you may like this one enjoy
