(So all know, I am not trying to be a troll, I am just pointing out that there might be some confusion here)
So I was checking out some of the recipes on the main bizarre foods site, and I saw a recipe for nutria, but with a picture of a squirrel. I was all like, wtf? I would assume this is a mistake, being that a squirrel is a different animal completely, and amounts to only a quarter of the size to a nutria . Nutria is a GIANT water rat. (Nutria weigh an average of 12.0 pounds.) Not a small fluffy squirrel(8-16oz). Also, the meat tastes more like rabbit, and is not as fatty. Here is the recipe that was posted: Nutria Gumbo 2 bone-in nutria (squirrels), skinned 1 crayfish tail meat 1/2 andouille sausage, sliced thin 2 cups shucked oysters and their reserved juices 7 tbs. flour 7 tbs. canola oil 1 cup each celery, onion, poblano pepper, small diced 12 ounces tomato puree 3 tbs. worcestershire sauce 3 tbs. gumbo file powder (ground sassafrass) 1 serrano chile, minced, seeds included 5 cups chicken stock 2 cups fish stock 1 cup clam juice 1 tbs. fresh thyme leaves 1 tbs. Cajun seasoning 2 cloves garlic, minced 1 bay leaf Place the flour and oil in a large well-insulated soup pot over medium heat. Stir every 45 seconds so the roux turns blond, then brown then dark brown. While this is going on, chop the nutria into 2-inch pieces. When the roux is very dark brown and aromatic, add the nutria and brown the pieces in the roux, then add the vegetables, andouille sausage, herbs, spices and garlic. Saute until onions are glassy, about 4 to 5 minutes, add the tomatoes and stir. Add the stock and Worcestershire. Bring mixture to a boil, reduce heat to maintain a simmer, and simmer for 75 minutes. Add the seafood, raise the heat back to medium, and continue cooking for 15 minutes, stirring occasionally. Season with salt and pepper, and serve with white long grain rice, passing crusty bread at the table. ------------------- So I guess if you use a nutria in this recipe, I would only use one,(being that they are so large) and maybe double up on some of the ingredients. But personally I prefer mine just grilled ^_^ YUM!hehe. |
