I grew up with this, hated it as a child, LOVE it as an adult. A pig's head, split in half, brain removed (pig's brain is not eaten in Greece) the snout is also removed, the ears split hair singed and washed thoroughly. The feet must be added also. Head and feet are gently boiled for several hours until the meat falls off the bones. It is cut into small bite size pieces and kept separately. The broth is seasoned with finely ground fresh peppercorns, salt, a ratio of 6:2 broth:lemon juice (must be freshly squeezed) and one quarter cup bitter-orange juice. 1-2 tablespoons of freshly ground cumin are also added and the broth is then reduced to less than half it's original volume. the meat pieces are returned to it and the whole thing is placed in the refrigerator in a suitable mold. After it congeals (usually overnight) it is served as a snack with homemade bread. This is traditionally made at Christmas in Crete. Quick observation Andrew. I think in the Mediterranean at least, you're confusing the pancreas with the SPLEEN. the pancreas is too small and of no nutritional value vs the spleen which is full of iron and recommended by doctors as an iron rich food for anemic children ( my pediatrician certainly did!)
