There is this beautiful orchestral song that is playing while the man is hand mixing the noodles with the bamboo stick. It is so touching and I would love to find who composed that piece!! Since you watched the same episode I did maybe you or someone else could tell me the name of the "off beat punkish" looking chef in Hong Kong and the style of food he was doing where he was deconstructing traditional dishes and then putting them back together on tiny plates?
