I have to say that I'm a big fan of Bourdain - his show, his cookbook, his books, Les Halles. However, I have to strongly disagree with him about the waiter who was profiled on Into the Fire. First of all, I have been to Les Halles several times and the food is always excellent. However, the service has been lackluster due to this Tim character. He not only would not even look at us as he took our order, he got my friend's order wrong, and attempted to pawn it off because as he said "it's our best steak". He was our waiter one other time with a similar experience...we almost died last night when we saw HIM profiled as being this legendary server. Not in our eyes, in fact, we will go back to Les Halles, and wait longer so as NOT to have him serve us. Loved the behind the scenes, especially having been there (minus Mr. Bigshot, of course!)

It is funny to hear your story Jazmin.
My friends and I had a similar experience. Our car was in a garage and had to be out by 11, with 9 O'clock reservations we thought we would be OK. When we were finally sat I politely asked Tim if I should move the car now or if he will be able to serve us with enough time to move the car. With confidence and a (false) sense of pride he said he would bring us our food quickly. Or I should say he brought food quickly, not our food. My order was wrong and Tim (now I know his name) pleaded with me to eat it. He asked me many times to not tell his boss and advertised the dish relentlessly. Finally he said, "Well you can't leave by 11 unless you eat this." Being a waiter myself I one time I still left a tip, but this was the worst service I have ever had. I hope, for others, my situation was unique. Even if this is so I don't believe in Saint Tim. |

Poor Tim. With all the negativity surrounding him, he may be gone the next time you all visit Les Halles. He did seem a bit much...

What a shame. Both Tim and Frederic Larrieu (the maitre d you saw making my crepes) were fabulous to my table all night long - well before Todd came into the front of house to shoot, and well after he went back into the kitchen. In fact, all the staff were great. They were really patient with the people trying to shoot pix at the partition - there is only a narrow space behind it for staff to cross over from one side of the restaurant to the other (it's divided by a long wood and glass partition down the middle). They were really patient with the crew, too - I saw a lot of platters swooping flawlessly over Zac's and Todd's heads, with no one missing a beat. Maybe fame has got to Tim.
