I BEEN TO HIDALGO MEXICO CLOSE TO ZIMPAN THEY COOK SHEEP IN THE GROUND AND TAKE THE BLOOD AND COOK IT WITH CHOPPED TOMATOES,CILANTRO,ONIONS.ALSO,ONLY IN THE MONTH OF OCT. THEY GROW CORN AND THESE MUSHROOM GROWS ON IT THEY COOK IT WITH THE YOUNG KERNALS WITH PEPPERS IT IS VERY GOOD.IT'S BLACK BUT FOR ME BEING AMERICAN I LIKED IT,HONGOS IS THE NAME. AND I ATE THE SHEEP THAT THEY CALL BARBACOA. AND OTHER THING THEIR IS A DRIED CHILI CALLED RALLADO THAT YOU CAN ONLY BUY IN HIDALGO MX.THEIR ARE OTHER THINGS TOO LIKE THESE WORMS THEY FRY.
