I was driving in Tyler, Texas when I spotted an interesting place to eat called "The Purple Pig". I figured it would be a barbeque joint, but why "The Purple Pig"? I went on down the road to conduct my business and on the way back I found my car turning into the parking lot of... "The Purple Pig". The American Indian decor on the outside of the place was inviting enough and as I stepped onto the wood plank decking to enter... I was greeted by some friendly east Texas folk sitting outside enjoying a rather strange looking and very large sandwich on a bun. I walked up to the counter and inquired of the waitress as to what exactly they were eating? She proudly informed they were eating a purple pig sandwich. "Okay", I said... "enough is enough... what is a purple pig sandwich!" She told me I had to taste it... no explaination would suffice. So... I ordered a purple pig! It was before me in no time and as I looked at this enormously stuffed sandwich I was not sure whether I actually wanted to try it after all.... I took a deep breath, picked up the sandwich and stuffed it into my mouth. The delicious pork was generously laden on the large bun and spread over it was a thick layer of what?.... Yes it was!.... Coleslaw made with purple cabbage mixed with a special house dressing. I must say... that "purple pig" was the most bizarre thing I ever tasted... but it was actually very good!
