I was very surprised that Andrew didn't feature the famous St. John restaurant in his London show. The chef is Fergus Henderson who was voted England's top chef a few years ago. He is a brave young man fighting Parkinson's Disease but more important for Andrew, he serves FANTASTIC bizarre food. In addition to Pig's spleen, Ox Heart ad Bone Marrow they serve rabbit, tripe and faggot. One of the most interesting dishes that I ever had there was snipe, I believe. The bird is literally split in half with the halves of the head presented so you can scoop out the brain. There is also a small piece of toast with a topping made from the internal organs. Don't miss this restaurant on your next trip to London!

It's probably b/c Fergus' restaurants, St. John and St. John Bread & Wine, has been featured on Anthony Bourdain's shows, No Reservations and his old show on FN, A Cook's Tour. Fergus Henderson is a friend of Anthony's and Anthony has also mentioned him in his books. Being a fan of Anthony's and also friendly with him, it's likely that Andrew knows it's been done before and decided to show a different restaurant on his London show such as Roast restaurant.

I hope to try Fergus Henderson's restaurants on my next trip to London. And Roast as well.
