Mom’s Corn Bread Dressing

Corn Bread

Mix
1 1/2 Cup Corn Meal
3 Level Tablespoons Flour
1 Teaspoon Salt
1 Teaspoon Soda
2 Cups Buttermilk
2 Tablespoons Bacon Drippings
1 Egg

Cook Corn Bread at 475 degrees for 25 minutes.
For Muffins or Corn Sticks cook at 475 degrees for 15-20 minutes.

Corn Bread Dressing

In one cup of Chicken broth cook the following until tender.
1 Teaspoon Salt
1 Cup Chopped Onions
1 1/2 Cup Diced Celery

Break up Cornbread, Add two slices of White Bread (broken up). Poor Celery, Onion & Chicken Broth over Cornbread and White bread mix.
Cover and let stand 20 minutes.

Then take a Potato Masher and mash and mix well. (if too thick add more broth).

Add 2 Teaspoons Rubbed Sage and Pepper to taste. Beat Six Eggs Lightly and mix with Dressing mix.

Bake at 400 degrees for One Hour or until done in the Center. If it starts getting brown around the edges Baste with a small amount of Broth.

Optional – with meat added.

Boil Chicken or Turkey until tender. Take off skin and remove bones. Cut or pull apart in 2 inch pieces. Put a layer of dressing in casserole then a layer of Meat. A layer of dressing and a layer of meat. Top with remaining dressing and bake at 400 degrees for One Hour or until done in the Center. If it starts getting brown around the edges Baste with a small amount of Broth.
