I know that he has been to Portugal, but the Azorean people cook differently compared to the mainlander's. They are influenced on fresh seafood, local farm animals, and home grown ingredients. Each island in the Azorean archipelago has different flavors and culture specific to their island. Cataplana de lulas was my favorite, and the "Tile" in Angra do Heroísmo on the island of Terceira. These islands have been influenced by many cultures traveling by and have been integrated into their cuisine.
