Dear Anthony,

This is the experience of a lifetime, and an opportunity to show up Zimmern.....

Zabíjaèka

http://www.radio.cz/en/article/65937

I worked at a small Czech school in the town of Letovice in 1994-1995.

One of the best times I had was an invitation by the school's art teacher to attend his family's annual zabíjaèka feast. His uncle was a butcher, and I was very lucky to have such an excellent example of this fine Czech Tradition.

I dove in head first. Helped hold the pig when they sliced it's throat, watched the old grandma submerge her arm halfway into a tub to stir the blood for blood soup....drinking like a fish the whole time.

I ate all that shit man, the brains, personally helped to clean the shit out of the intestines - did I mention all the drinking? There is more to Czech cuisine, especially in Moravia - the lesser known region of the Czech Republic. The Bohemians get all the publicity, but I much preferred the Moravian region's people and culture...

I know it would make a great show, if you need a guide, let me know.....
