You need to go for hanal-pixan, (day of the dead), and try a mucbil-pollo or pib to taste the mixture of religions, a queso relleno and really taste the mixture of cultures, the authentic cochinita pibil, baked by mother nature, lechon al horno, panuchos, salbutes, caldo de lima (lime soup), k'ol de jabali (wild boar with regional gravy), x'ek (spicy citrus and jicama salad), vaporcitos (steamed banana leaves wrapped tamales), tamales colados (a tender delicacy), relleno negro (turkey stew condimented with blackened chilies), relleno blanco, a simple but regal beef stew, bull stew (cooked right after the bull fight).
If you did not visit the pyramids in Egypt for your episode there, you probably will not visit the archaological sites there, but I would like to see you tasting the magnificent cuisine of our land. I dare you, Tony. I will eat a raw habanero if you do an episode on the state of Yucatan.

It is hot and humid in Yucatan, Tony, it is no fun, believe me, plus we are on the top of the Peninsula of Yucatan, so we get hurricanes, bad a**** ones, like Gilbert and Isidoro, so I am sure you will be scared, huh?
I dare you, Tony, one whole raw habanero eaten raw, remember that.

I have been waiting forever for a Yucatan show. It is regional Mexican food like you never get in the states. Hot chile peppers, fresh seafood, pork and markets. Need I say more?
You must try the mucbil pollo, pibil, poc chuc, panuchos, chaya drink, lime soup, salsas, etc.....
