Tony, I'm a chef, I've eaten in your restaurant and I have read all your books. If you ever get the chance you MUST visit the beautiful Greek island of Santorini. When you get there go to the end of the town of "Fira" and have a meal at "Koukoumavlos". I swear the chef there is the Thomas Keller of Greece.
