Hi I have also been looking all through the Chile episode guide for this same recipe and have joined here just to ask your very question. Of all Anthony Bourdain's shows I have seen this was one of my favorite places to 'visit'.
Iv'e searched through a lot of different Chilean recipe sites and still haven't found the name, but reading your question above has helped me some because at least you remembered the ingredients.
