Well, normally, 500 chips would be good. 3 colors is optimal, but no more than 4. But, you want "big stacks." If you really want mammoth stacks go with 1000 chips. If you get 4 colors, choose the colors you want. But, don't just get 250 of each color. For instance, if you wanted white, red, green, and black, get something like:
300 white 300 red 250 green 150 black
Of course you want more of the lower chip denominations. If you are truly playing tournament style poker, you will need to start each player with maybe just whites and reds, or maybe whites, reds, and greens. Of course you can make the values be whatever you want, but for an example, say that the chips are standard denominations, white is $1, red $5, green $25, and black $100.
Start each player with maybe $30 white and $120 red. Start the blinds small, like $1/$2. Set a timer, and increase the blinds as you go, after x amount of minutes. When the small blind reaches $5, "color up" the whites into reds and have each player "color up" some red into green...like 20 reds for 4 greens or something like that. And as you go, you'll eventually color to green and black, ans so on. Just sit down, think it over. You can get as many or as few colors as you'd like, and you can make them the amount you want. For instance, make the whites 100, reds 500, etc...
But the main thing is: get a quality chip set that you will be happy with for a long time. You SHOULDNT need more than 500 chips for 8-10 players, but like you said, you want big stacks. Go with the 1000 then...why not? You can always add chips and multiple colors to your collection as you go too. Who knows, someday you might be hosting a 30 player tourney, and might need 2000 chips! Imagine the fun...
