Just a little correction:
You mentioned that the Casa Botin is the oldest restaurant in the WORLD, and gave a date of about 1750 for its opening (I don't have that date handy). I have reliable information saying that El Rinconcillo in Sevilla opened in 1670, making it older by about 80 years.
That's what you get for only going to the capital and the most cosmopolitan cities in Spain, and skipping the most beautiful. (I'm only a little prejudiced...I lived there many years ago.)
Would love to see you hit Sevilla next season!
