Although most wouldn't think "hopping nightlife" when discussing Venice, there are several bars that keep both Venetians and tourists entertained. Campo Santa Margherita is a large open square in the Dorsoduro neighborhood that is crowded during the evenings year 'round. DuChamps and Orange are two bars that have great outdoor seating for people watching, while nearby Cafe Blue and Cafe Noir are home to a young crowd that spills out into the streets until early morning. Santa Margherita is also home to late night food such as Pizza Al Volo, where 1 euro and 80 cents can get you one of the best slices in all of Venice.
If you want a more upscale venue for late night drinks, Baccaro Jazz near the Rialto Bridge offers specialty drinks with a unique atmosphere.
If it is dancing you are after, Piccolo Mondo, located near the Accademia Bridge, is a very small dance club that plays American music and stays packed until late.

Weather permitting - just walk through ALL the neighborhoods. Dress warm though if you are going in December. The further away from the touristy spots the more homey the food and people get. If you find an out of the way, down the back alley looking restaurant - go on in and take a look around. Talk to the people in there and experience Venice!!
