Some of best food I've ever had was in Banff, Alberta, Canada. Every had Rocky Mountain Cuisine? Here's a video on the subject:

It depends. You may find excellent japanese restaurants in Europe, or in America.

I've heard in Thailand there is a very good italian restaurant. I don't remember the name, but it is very famous.

By the way, did you know there is a new cool and intimate new sushi place in Rome which offers high quality Japanese foods for eating or take-away, and offers great hand-made cakes and free wifi to all customers? http://naoko-sushi-roma.blogspot.com/

I've always heard Chicago is pretty amazing, but I've never been there. Check out Aspen. The have Nobu Matsuhisa, A Todd English restaurant at the Little Nell, and a competitive culinary atmosphere. If you want to visit, check out Restaurants in Aspen Colorado

Paris is good, but it depends on what you are looking for really...

For avant-garde stuff, which is what I assume you are talking about, you cannot beat Spain right now. That is where the new front of innovative cuisine is and it is amazing.
