Books have been written about the legendary eating in this area and with good cause. I profess nothing more than a passing knowledge of this region's fare, but here are a few of my favorite spots: In Aix, La Malta on the Place du Tanneurs. Without reservation, the calzones piping hot from the wood-fired brick oven are world beaters. Washed down with a carafe of chilled rose, lunch doesn't get any better. In Carpentras, the Cafe Siecle, across the square from the Palais de Justice serves a caramel and pear tart that is worth the ten hours stuffed into the back of a DC10. The salade du jour is usually perfect and the Lemon chicken is worth the wait. La Sirmonde in Roussillon taught me what paelle should taste like. Get a table overlooking the valley and eat slowly. So many others, but one shines above the rest, Le Galbouret in Menerbes. This little hole in the wall resturant is run by a husband and wife team who turn out some of the best food I have tasted in my short (23 year) pursuit of culinary craft. Have the Coustard de escargot, at least a dozen perfectly finished escargot in a citron creme sauce, all contain within a puff pastry that must have been turned ten times. Then the magret du canard, served in a pepper plum sauce and cooked to perfection. My wife and I were renting a house in Menerbes with the idea of driving to a different village each night to try the local spots. We did a couple but wound up the rest of the month eating at this absolute gem of a cafe. If you are within a hundred kilometers of this spot do not miss this place!!!!!
